Homemade Crunchy Granola


Granola is nutritious and a delicious little snack. I love it added to my yoghurt, sprinkled on banana bread before baking, added in cookie dough, or just on its own. It’s also very easy to make. Here is a little recipe I made up this weekend for my homemade yoghurt parfait. They were so pretty and delicious. You can also add any other seeds or nuts you may have on hand. I did not add any dried fruit, but you can always add in your favorite dried fruit. I am sure that you will be happy to make your own crunchy granola once you realize how easy it is to make at home.

INGREDIENTS

2 cups old-fashioned oats

1/2 cup shredded coconut

1/2 cup flaked almonds

2 tbsp flax-seed

1/2 cup sunflower seeds

1/4 cup brown sugar

2 tbsp coconut oil

2 tbsp honey

1/2 tsp cinnamon

1/4 tsp salt

METHOD

In a medium bowl, combine oats, coconut, flax-seed, almonds, sunflower seeds and cinnamon.

In a smaller pot, combine brown sugar, honey, salt, and coconut oil. Mix well together, dissolving sugar. Just bring it to a light simmer but do not boil or the sugars will begin to crystallize.

Pre-heat oven to 300 degrees.

Pour the syrup mixture over the oat mixture. Coat all of the ingredients properly.

On a cookie tray, empty the mixture and spread out evenly. Bake for about 35-40 minutes until golden brown. Turn the mixture with a spatula twice during the baking period.

Mixture will seem loose and wet, but it will harden and crisp while cooling.

When cool, store in a glass bottle or a tightly closed container to retain freshness.

 

 

Yoghurt Parfait

Use small pretty glasses.begin with a layer of granola. Add a layer of vanilla or honey greek yoghurt, Sprinkle with your favorite fresh fruit and continue a second layer in the same order. Top with fresh fruit, sprinkles of granola, chia seeds and some fresh mint.
